Millions of Peaches, Peaches for Me...

MMMmmmm. I just left my food fundamentals class, where we made some amazing food. My dish I was in charge of was beer-battered coconut shrimp with a spring mix salad topped with grilled peaches. Here is a pic of the whole dish:



I tasted a shrimp as I was cooking it, but deep fried = evil. But know what weren't evil and were AMAZING? The grilled peaches. We just tossed them, sliced, with olive oil and a bit of salt and grilled them up, and they just become magical. I've got a couple cups of leftovers to take home, and I can't wait to eat them with yogurt, cereal, over salad, on their own, maybe with some cheese... mmmm!

It's a great way to get fruit in, and it makes them soft and easy to get down too!

I am going to have to try that! I have never really tried grilled fruit before. It looks great!
